SPECIAL BREADS - CARASAU AND GUTTIAU

Wonderful to eat as it comes or heated up in the oven, pane carasau flatbread shares a close historical bond with its place of origin: Barbagia, the wildest and most inland area of Sardinia.

The guttiau, a variation of carasau, is a crispbread with oil and salt sprinkled on the surface, giving it a slightly more powerful flavour than the traditional carasau. It’s considered one of the oldest recipes in the world.

Pane guttiau is irresistible as an aperitif, delicious during a meal and the perfect accompaniment to clear and creamy soups.

CHEESE - PECORINO SARDO

Pecorino sardo is a renowned cheese, made exclusively from the milk of sardinian sheep, giving it a distinctive and authentic flavor profile that reflects the island's rich pastoral heritage.
Pecorino sardo dolce is a mild, creamy taste, with a slightly tangy undertone cheese, that can enhance a wide array of culinary creations. the young dolce version is delightful in salads, sandwiches, or simply enjoyed on its own. the mature “maturo” variety is excellent for grating over pasta, risottos, and soups, or pairing with robust wines and cured meats. its rich flavor also complements fruits and honey, making it a delightful addition to cheese boards.

FRESH CHEESE - FIORE SARDO

Also known as "sardinian flower," is a distinguished sheep's milk cheese, crafted by shepherds on the island for centuries. Fiore sardo has a rich, robust flavor with a delightful balance of savory and it can be enjoyed in numerous ways.

It is excellent as a table cheese, served with fruits, nuts, and honey, or paired with robust wines.

FRESH CHEESE - RICOTTA SARDA

Ricotta sarda is a delightful whey cheese, known for its fresh and delicate flavor.
Its name "ricotta" means "recooked" in italian, reflecting the traditional process used to create this cheese.
Ricotta sarda has a mild, slightly sweet flavor with a fresh, milky taste. When aged, it becomes firmer and more crumbly, with a more concentrated flavor that retains a pleasant creaminess.
Ricotta sarda is a versatile cheese,perfect for spreading on bread, stirring into pasta dishes, or incorporating into desserts like cheesecakes and cannoli.

Sardinian honey comes in various types, each reflecting the different flowers and plants found on the island.

Miele di corbezzolo sardo is renowned for its unique and complex flavor profile,it has a distinctly bitter taste, often described as earthy, robust, and slightly tangy.
It pairs exceptionally well with aged cheeses like pecorino sardo, where its bitterness balances the cheese's sharpness.

Sardinian Asphodel Honey


This distinctive and prized honey, made from the nectar of the asphodel plant, has a mild flavor which makes it perfect for sweetening teas, yogurt, and desserts without overpowering the other ingredients. It pairs wonderfully with fresh fruits, cheeses, and light pastries. Additionally, it can be used in marinades, dressings, and sauces to add a subtle sweetness and floral aroma.


CULURGIONES, MALLOREDDUS AND FREGOLA SARDA

Culurgiones are among the best traditional Sardinian dishes. It's a fresh filled pasta similar to ravioli, with a filling of potatoes, cheese, olio Evo and mint.
Texturally, these have a superb mouthfeel. Finished by seasoning with a light pomodoro sauce, grated pecorino & fresh mint.

Malloreddus, are a type of pasta typical of Sardinian cuisine. They have the shape of thin ribbed shells and are made of semolina flour and water.

Perfect with robust sausage and tomato sauce, their ridges capture savoury flavours.

Malloreddus shines in traditional Sardinian recipes and adapts to modern culinary trends, pairing well with saffron, pecorino cheese, and local vegetables.

Fregola is a beautiful, tasty Sardinian pasta made from hard durum wheat flour - rolled, sun-dried, and toasted to a mix of shades of yellow, gold, and brown.

A versatile food that goes well with both meat and fish sauces, and broths. It can be cooked both as a risotto and as pasta, ideal base for soups or to be eaten cold in a salad



MAIALETTO SARDO (SARDINIAN SUCKLING PIG)

Maialino Sardo is a Sardinian breed suckling pig. It must be at a particular weight fed mostly if not entirely on its mother’s breast milk and cooked on a spit over a wood fire. Long and slow cooking produces a perfectly tender flesh and a very crispy skin.
